English oak is a higher quality choice, with greater colour variety and durability.

Large butts and slow growth produce more variance in colour.
English oak is grown further apart than European oak so it produces larger trees and better 'medullary' rays (patterning).
These big trees are rightly seldom felled, but often wind blow and are perfect for quarter sawing.
